A comfort side dish, there is no dinner that scalloped potatoes cannot sit next to on a plate. Creamy and buttery, its also easy to add as much cheese as you desire for an easy cheesy upgrade. Scalloped potatoes also make a great potluck side dish recipe and can be served in a casserole dish.

Scalloped Potatoes and Ham Recipe

There are often side dish recipes that remind me of growing up. Watergate salad is absolutely one of them but scalloped potatoes is a close second. I can still remember my mom serving this up on the side of our plate and honestly, she needed no holiday to make it happen. Chicken and scalloped potatoes, steak and potatoes, even spam and scalloped potatoes- seriously it was one of her favorites.

Cheesy sliced potatoes with just the right amount of flavor were a staple on my plate, such a comfort food, but rarely did we add protein. This potato recipe, however, is a fantastic way to chop down and use all your left over Christmas ham without the guilt of it going to waste in the fridge.

For me personally potatoes are majorly filling and I don’t eat them as often as I want. To be perfectly honest, carbs go to my hips and make me sad.

All that said, sometimes its worth the extra calories, to kick low carb side dishes and keto recipes to the curb, and to seriously indulge in every tasty bite.

Scalloped Potatoes and Ham

Now you may be used to serving up potatoes au gratin, boiled, mashed, or even made out of hash browns. But these typical scalloped potatoes get a little modern update by the addition of ham.

Why Ham? For us, ham seems to sit in the fridge in a ball of foil for like 3 weeks after every holiday. Then sometime in January, when I am doing the old holiday food and recipe clean out, I discover it pushed in the back and gross. This year I am determined to find ham recipes to really help the ham not go to waste and this casserole bake is a product of that! I hope you enjoy! Super easy, out of this world yummy, and worth the wait to bake up, you will just love how this casserole fits nearly every table every night of the week.

  • 3 tablespoons butter
  • 1/4 cup diced onion
  • 1 tablespoon minced garlic
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper (optional, but I recommend)
  • 2 cups milk
  • 1 cup frozen corn (keep frozen or thaw)
  • 2 cups chopped ham
  • 2 lbs potatoes, washed and sliced into 1/4″ rounds
  • 2 cups shredded cheese
  1. Meal Prep for Scalloped Potatoes and Ham: I used a 2.5qt baking dish but you can easily use a square baking pan as well.
  2. What temperature to cook your scalloped potatoes on: Preheat oven to 350

Grease casserole dish or square baking pan and set aside.

In a skillet, add butter, onion and garlic and heat over medium heat for 3-5 minutes or until onions are soft.

Add flour, spices and milk.

Scalloped Potatoes and Ham Easy Southern Potato Bake

Whisk and cook over medium high heat until thick and bubbly, about 5 minutes.

Stir in ham and corn and heat an additional 2 minutes or until corn is heated through (especially if its frozen corn to start).

Remove from heat.

Line bottom of prepared baking dish with a layer of potatoes.
