Can I use a different fruit instead of peaches?

Absolutely! In fact, strawberries and mozzarella are one of my favorite combos. Nectarines, or even watermelon pieces, can also be great substitutes. Whatever you choose, just use firm fruits that hold their shape well on the skewer.

Is everything bagel seasoning necessary?

No, it’s optional. However this seasoning adds a nice crunch and extra flavor, but the skewers are also delicious without it. Other choices that might work would be coarse sea salt or poppy seeds.
