This recipe is an easy take on traditional fried rice. Still, it keeps it healthy and typically (depending on how strict you are) diet-friendly by replacing the white or jasmine rice with deliciously textured cauliflower.

How To Make Cauliflower Fried Rice with Chicken

Cook the Chicken and Veggies

Heat the oil to medium-high and add the chicken to a large nonstick skillet or wok. If your bacon is uncooked, add it in pieces at this stage and cook in the same pan with the chicken.

Cook until browned on both sides, roughly 5 minutes, or until the chicken registers 165 degrees in the center.

Introduce bacon, peas, carrots, and cauliflower to the pan. Stir frequently until thoroughly heated.

Prepare the Eggs

Whisk together the eggs and milk in a separate bowl.

Create a well in the center of the chicken and veggie mixture, then pour the egg blend into the hot skillet. Lower the heat to medium. Cook until the eggs are scrambled, then mix everything.

    Heat vegetable chicken mixture on medium, stirring frequently until all ingredients are hot and heated through.
