Andouille Smoked Sausage Skillet Recipe

Being from the south, red beans and rice, complete with sausage and ground beef, are a family favorite.

Whether you soak the beans or go the quick and dirty version, there is no doubt that a hot plate of this southern delicacy makes you feel all warm and hearty. And sausage dishes ARE delicious but pulling out the red beans and rice can get a little dated if that is the only way you enjoy sausage. Personally, I wanted to make sure I offered my family something more fun, more colorful, but still with totally flavorful sausage.

That is where this Andouille smoked sausage skillet comes into play.

With only one pot needed, you can easily enjoy your sausage, okra and sweet corn as a filling side dish or serve over rice and have a full, filling meal. Plus, this easy peasy recipe doubles for most diets by leaving out the rice and just enjoying the super delicious combination of sausage, garlic, onions and crispy veggies.

My family loved this dish and I loved an excuse to throw some okra in it – which in my opinion is a way under used and under served veggie.

It makes a great hot side dish in smaller quantities or served over some delicious choices (my thoughts below the recipe) also make a great meal.

Andouille Smoked Sausage Skillet

I love recipes that leave you with few dishes to wash. This smoked sausage and veggies recipe does just that by combining all the delicious flavors of garlic and onions right into one pan for easy clean up.

Plus making it together ensures that its so savory cooking in all those garlic and onions as one dish!

  • 1 tablespoon vegetable oil
  • 1 package, 10 oz, smoked sausage
  • 1/2 cup white onion, sliced
  • 1 jalapeno pepper, deeds removed and diced
  • 1 tablespoon minced garlic
  • 1 cup frozen corn
  • red pepper, chopped 1 cup
  • grape tomatoes, halved – 1 cup
  • frozen cut okra – 1 cup
  • 2 tablespoons red wine vinegar
  • salt and pepper
  • chopped fresh parsley
  • cast iron pan <—— this one is my go to

Tip: Want to make this sausage skillet into a sausage succotash?

Simply add lima beans to it! If you want to make more of a succotash side dish, then add some lima beans and cut your sausage down to bits and it can be served more as a hot side dish.

Serve with: I like to serve over white jasmine rice, but if you want to cut the calories, serve over cooked cabbage!

Is there a difference in sausage brands?

Yes! I think that like potato salads, everyone has a favorite. Personally where I am from, we eat Conecah sausage.

Its made from the south (I have driven through the county before) and is pretty much the only sausage I buy. Big flavor, great texture, and they have a variety of seasonings from mild to spicy to mix up your meals.

If you do not have a “flavorite”, then I would suggest trying their Hickory Smokes sausage. Both my local Publix and Walmart sell it. No, this is not a sponsorship, LOL~!

You may be wondering what an Andouille sausage is exactly. Its simply sausage made from pork.

One Pot Smoked Sausage & Veggies Recipe

Add oil, sausage, onion and jalapeno pepper to a large skillet and heat on medium heat for 5-7 minutes or until sausage is browned and onions are tender.

Add garlic, corn, red peppers, tomatoes and okra.

Stir in vinegar and season well with salt and pepper.

Continue to heat on medium heat, stirring frequently about 7-10 minutes until heated through.

Is this dish low carb or keto friendly?

You know everyone I talk to has a different opinion on what low carb means to them. Personally I think corn is high in carbs so it may be a no-no, but can also be easily substituted.

I am no dietitian so this is something you need to decide for yourself if okra, tomatoes, and corn makes for a good addition to your diet.

Personally I believe a balanced diet is the way to go and this recipe is great at adding color and flavors without so much guilt.

Dishes that I know for sure are low carb or keto friendly are Egg Roll in a Bowl, Stuffed Mushrooms, Loaded Cauliflower Casserole or a main dish like Mexican Chicken Thighs or Cauliflower Chicken Fried Rice.
