Maple Bacon Brussels Sprouts

Brussels sprouts with bacon and maple syrup (or bacon maple brussels sprouts if you prefer) is the perfect veggie side dish. Complete with crispy bacon pan-roasted in maple glaze drizzle, these brussels sprouts are a sweet and salty flavor explosion!

Bacon Brussels Sprouts Ingredients

It’s incredibly easy to take fresh Brussels Sprouts and create a savory and sweet Brussels Sprouts side dish. Roasting in the oven, these Brussels Sprouts are a caramelized pile of perfection.

Slightly crispy with bits of bacon and a perfect amount of sweetness from real maple syrup.

  • whole or halves fresh Brussels Sprouts
  • olive oil
  • pure maple syrup
  • bacon
  • salt and pepper

Prepping the Pan for Maple Syrup

Because this recipe uses maple syrup, you have to really grease a pan, or I recommend adding parchment paper to a pan and then greasing the parchment paper.

Roasting Whole Brussels Sprouts

Most Brussels Sprouts recipes cut Brussels Sprouts in half for fast cooking.

However, this recipe can also be made with whole Brussels Sprouts. It is recommended, however, that you turn halfway through as the maple syrup will start to caramelize and depending on the oven, burn.

As with all ovens, temperatures run different and it’s best to always check on this dish halfway through and adjust as needed.

  • Preheat oven to 400 and line a baking sheet with parchment paper.
  • Grease the parchment paper generously with baking spray.
  • In a mixing bowl, mix together raw whole Brussels sprouts, olive oil, and real maple syrup.

Add raw bacon and mix well.

Season maple bacon brussels with salt and pepper and mix.

Place prepped Brussels Sprouts onto prepared baking sheet, spreading out the raw bacon so it’s on a single layer.

Bake for approximately 30-40 minutes or until bacon is cooked and Brussels sprouts are brown. Please see recipe card to note about baking times and working with Brussels Sprouts.

Remember that the outer layer of Brussels Sprouts can get crispy or caramelized, so turn over and flip half way through so so the sprouts are even color on all sides.

Roasting Halved Brussels Sprouts

This Maple Bacon Sprout recipe can also be made faster by cutting sprouts in half.

Halving your Brussel Sprouts and really making this a much quicker side dish if you are pressed for time or simply want smaller, crispier bites. This is the ultimate restaurant-quality side dish!

Most of the same rules apply but the timing is different.

  1. Preheat oven to 400 and line a baking sheet with parchment paper.
  2. Grease the parchment paper generously with baking spray.
  3. In a mixing bowl, mix together raw Brussels sprouts, olive oil, and maple syrup.
  4. Add raw bacon and mix well.
  5. Place onto prepared baking sheet, spreading out bacon so it’s on a single layer.
  6. Season with salt and pepper.
  7. Bake for approximately 12-20 minutes or until bacon is cooked and Brussels sprouts are brown.
  8. Remember that the out layer of Brussels Sprouts can get crispy or caramelized, so you may want to turn over so its an even color on all sides- this is more of a preference.

What goes well with Maple Bacon Brussels Sprouts?

They are already amazing on their own but drizzle a bit of Balsamic Reduction for a little extra richness.

What type of bacon is recommended?

Make sure only raw bacon is used as it cooks in the oven itself. There is a variety of smoky bacon, like Hickory, that do really well.

What meat pairs with Brussels Sprouts?

    USING HALVED BRUSSELS SPROUTS - 15 MINUTE VERSION

    Preheat oven to 400 and line a baking sheet with parchment paper.

    Grease the parchment paper generously with baking spray.

    In a mixing bowl, mix together halved Brussels sprouts, olive oil, and real maple syrup.

    Add uncooked bacon and mix the Brussels Sprouts side dish really well to coat all the vegetables

    Season Brussels Sprouts with salt and pepper and mix everything together again until well seasoned and covered.

    Place maple syrup Brussels sprouts onto prepared baking sheet, spreading out bacon so it's on a single layer.

    NOTE ABOUT SUGAR: If you pour the bowl and there is excess maple syrup on the baking sheet, that will caramelize in the oven and burn on your sheet. Its not a big deal but it could smoke or turn black, so I do my best to not let excess syrup hit the sheet.

    Bake sprouts for approximately 12-20 minutes or until bacon is fully cooked and Brussels sprouts are roasted and slightly crispy.

    Turn them over half way between cooking so both sides get slightly crispy.
