Sweetened with honey, heightened with garlic, and pretty dried cranberries made them full of Thanksgiving day side dish compliments.

When it comes to Brussels sprouts, you either love them or you hate them. I think a lot of people grow up not love them. I have heard anything from bitter tasting to tasting like feet. I didn’t even try brussels sprouts till I was well into adulthood (like LAST YEAR) and could not believe I was missing out!

There are so many ways and so many recipes you can use to serve up amazing tasting brussels sprouts, so if you tried them as a kid, make sure you try them now as an adult, and you might be surprised.

In the past week, I have been experimenting with different ways to cook up Brussels sprouts, and we have had some wins.

I think maple bacon Brussels sprouts is a pretty obvious way to cook them, but I also crusted them with buffalo breading (Buffalo Brussel sprouts recipe – which is fun as a snack to dip). Another totally festive Brussels Sprouts recipe that is new for 2021 is these Sautéed Brussels sprouts with Glazed Pecans.

However, this sweet Honey Dijon sauce poured over the Brussels sprouts, combined with the tasty bites of cranberries, makes a festive and delicious way to serve a vegetable side dish this holiday season.

That, combined with the EASE of a slow cooker, makes honey dijon Brussels sprouts a great choice all fall.

Ingredients

Here is a shortlist of ingredients; scroll to the bottom for step-by-step measurements and instructions.

  • 2 pounds Brussels Sprouts, halved
  • Dijon Mustard – There really are a variety of Dijon Mustard bases. I use generic store-value Dijon to combine with fresh honey, but it’s also fine to use Honey Dijon.
  • Local Honey – Again, tons of honey choices. I always try to use local honey that has wildflowers in it for that sweet taste.
  • Dried Cranberries – Dried cranberries are the best choice, specifically if you are making them for Thanksgiving or Christmas, but other dried fruits like dried cherries or dried blueberries can also work fine.
  • Kosher Salt & Black Pepper

How to Slow Cook Brussels Sprouts

  1. To prep for the slow cooker, cut brussels sprouts in half. If there are a few tiny brussels sprouts in the bag, its fine to leave those whole. Add halved Brussel sprouts into crockpot.
  2. Take out a mixing bowl and combine Honey Dijon Mustard, Minced Garlic, Salt and Pepper, and honey.
  3. Whisk together until combined.
  4. Pour honey mixture into slow cooker over Brussels sprouts.

  1. Add dried cranberries, and use a spatula to making sure vegetables are all covered. Season well with salt and pepper.
  2. Add pats of butter around the crockpot and place the lid on top.
  3. Slow cook Brussels Sprouts on high 1-2 hours or low 3-4 hours. Depending on the size of your brussels sprouts, it could change the time needed in the crockpot. I would test at the 2-hour mark and move to warm if Brussels sprouts are cooked through and still slightly crispy.

FAQ’s

Can you cook Honey Dijon Brussel Sprouts over the stove?

If you prefer to cook your Brussels sprouts in the oven so they get a slightly charred crisp, that is no problem. Just cook them up, make the sauce on the stove, and combine them before serving. Just follow my Roasted Brussel Sprouts Recipe here and then make the sauce separately.

Can frozen Brussels Sprouts be used over fresh ones?

I do not recommend using anything but FRESH Brussels sprouts in this dish. The watery base of frozen vegetables going from the freezer to the slow cooker has more of a chance of a soggy Brussels sprout.
