I didn’t grow up making Pilau Rice, but the first time I tried it, I knew I had to figure out how to make it at home. It’s surprisingly simple, and the warm spices make it feel so special. Now, it’s one of my favorite side dishes when I want something a little more exciting than plain rice.

Pair it with some warm naan and flavorful chicken, and you’ve got an easy dinner.

Seasoning and Ingredients

Here’s everything you need to whip up this very simple pilau rice recipe:

  • 2 tablespoons butter (I prefer unsalted, so I can control the salt in the dish)
  • 1 onion, thinly sliced (the thinner, the better)
  • 1 cinnamon stick (I always keep a stash of fresh cinnamon sticks in a jar)
  • 4 cardamom pods, lightly smashed (don’t crush them too much, just enough to release their fragrance)
  • 2 whole cloves
  • 2 bay leaves (fresh bay leaves work wonders, but dried ones are fine too)
  • 1 teaspoon turmeric (this is what gives the rice its signature golden color—don’t skip it!)
  • 1/2 teaspoon salt
  • 1-1/4 cups basmati rice (make sure to rinse it; my grandma always said this step makes or breaks your rice)
  • 2-1/2 cups boiling water (I usually boil it in my kettle to speed things up)

How to Make Pilau Rice

Melt the butter in a large skillet over low heat. Add the sliced onion, cinnamon stick, cardamom pods, cloves, bay leaves, turmeric, and salt.

Stir everything together, then cover and let it cook gently for about 8 minutes, stirring occasionally, until the onions are soft and the spices are fragrant.

Rinse your basmati rice thoroughly until the water runs clear—this is a tip I learned after too many batches of sticky rice. Add the rice to the skillet and stir until it’s completely coated in the buttery spice mix.

Pour in the boiling water, crank up the heat to medium-high, and bring everything to a gentle boil. Once it’s bubbling, reduce the heat to low, cover, and let it simmer for about 8-12 minutes. You’ll know it’s done when the water is absorbed and the rice is tender but not mushy.

This is the hardest part for me because the smell is so tempting! Turn off the heat and let the rice sit, covered, for 5 minutes. This step allows the rice to steam gently and become perfectly fluffy. Before serving, fish out the cinnamon stick, cardamom pods, cloves, and bay leaves.

What to Serve with Pilau Rice

Pilau Rice pairs with Indian curries, like butter chicken, tikka masala, or a creamy vegetable korma. I do not personally have those dishes on my site but you should be able to find some authentic versions online. It’s also fantastic alongside grilled meats like chicken or lamb kebabs, or I like to just pair with my favorite salmon recipe.
