Easy Fried Rice with Eggs

This garlic fried rice is my go-to when I need something quick and tasty. It’s packed with garlic, peas, carrots, and scrambled eggs. I cook the rice in chicken broth for extra richness and finish it off with a splash of soy sauce. It’s perfect as a side dish or even a meal on its own.

Easy Fried Rice with Eggs

This garlic fried rice is a quick and flavorful side dish or standalone meal. Paired perfectly with chicken, pork, or even just on its own in a bowl, stir-fried rice is an easy, fail-proof recipe ready in minutes.

Ingredients:

For skillet garlic fried rice, I keep it super simple. I cook my white rice in chicken broth instead of water and then fry everything up in a little oil, adding minced garlic for garlicky taste. I throw in some peas, carrots, and chopped onion but feel free to use what you have. Eggs get scrambled right into the rice so you won’t need any extra pans and then of course a splash of soy sauce. I also love to top my rice with chopped green onions and a drizzle of sesame oil, but both of those things are optional!

How to make Garlic Fried Rice

(Skip this step if you are using a rice cooker or day old rice) Add the uncooked rice and chicken broth to a saucepan. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes or until the rice is fork-tender. Set aside.

Once rice is cooked, add 2 tablespoons of cooking oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it. Then, add the frozen peas, frozen carrots, and chopped onions. Cook for about 5 minutes, stirring frequently, until the onions are tender.

Add the cooked rice to the skillet and stir well to combine with the veggies and garlic. Continue to cook for another 5 minutes, stirring occasionally to get a nice texture on the rice.

Push the rice mixture to the side of the skillet, creating a well in the center. Pour the beaten eggs into the well and scramble them. Once the eggs are cooked, mix them into the rice.

Stir in the soy sauce, ensuring all the ingredients are evenly coated. If desired, drizzle with 1 teaspoon of sesame oil (or garlic oil) for a more intense flavor.

Turn Basic Fried Rice into an Easy Dinner

To make this garlic fried rice a full meal, just add some protein! I usually go for chicken, but shrimp is a more classic choice when it comes to fried rice. If you want a vegetarian option, tofu works great too.

Frequently Asked Questions

What’s the best type of rice to use for fried rice?

The best rice for fried rice is cold and leftover rice. Make rice the day before and put it in the fridge. It will fry better and not be as sticky when you fry it in the pan.

How can I make my garlic fried rice even more flavorful?

You can purchase garlic oil but if you do not have any, sauté garlic clovers in oil ahead of time, then use that oil to fry your rice.

What is better for fried rice – oil or butter?

There’s some debate about whether oil or butter is better for fried rice. Personally, I prefer using a little oil—it works great and gets the job done. But butter is also a fantastic option. It helps brown the rice nicely and adds a richer, deeper flavor. So it really comes down to personal preference!
