Slow Cooker Chicken and Stuffing

If you are looking for an easy way to make chicken and stuffing in a slow cooker, this simple crockpot recipe delivers cozy comfort food with hardly any effort. Using boneless chicken breasts, boxed stuffing mix, and a few pantry staples, everything comes together right in the slow cooker for a full meal that practically cooks itself.

I will be honest, though, I was a little skeptical about cooking stuffing this way. Part of me wanted to just make the stuffing in the oven like usual. I wasn’t sure how it would turn out cooking directly in the crockpot, but I decided to go for it and mix everything right in.

Ingredients
- 2 to 3 boneless, skinless chicken breasts (about 2 pounds total)
- seasonings – black pepper, poultry seasoning, (salt is optional as the soup has salt content too)
- 2 cans (10.5 ounces each) cream of chicken soup
- ½ cup sour cream
- ½ cup diced onion
- 1 tablespoon dried parsley
- 1 box (6 ounces) boxed stuffing mix (with seasoning packet included)
- ¼ cup butter, melted
How to Make Chicken and Stuffing in the Crock Pot
To make it, I started by seasoning my boneless, skinless chicken breasts with salt (note that the soup has salt content so use with caution), pepper, and a little poultry seasoning. Once they were seasoned, I laid them right into the bottom of the slow cooker.
Over the top of the chicken, I added two cans of cream of chicken soup and sour cream.

I gently stirred the soup and sour cream together right in the slow cooker, just enough to combine them without disturbing the chicken underneath. Then I sprinkled in some diced onion and a little dried parsley.
For the stuffing, I used a standard six-ounce box of stuffing mix that already has the seasoning packet included. I mixed the dry stuffing with melted butter in a separate bowl, making sure everything was evenly coated. Once the stuffing was prepped, I spread it right over the creamy soup mixture in the crockpot. That’s really all there is to it.

Once everything was layered, I put the lid on and let it cook. I used the low setting for about six to seven hours, but you can also cook it on high for about three to four hours if you need it ready sooner.
Either way, the chicken turns out tender and juicy, and the stuffing softens, absorbing all the flavors from the creamy sauce underneath.
