Oven Baked Melting Potatoes
Delicious and easy melting potatoes with soft white centers and brown crispy outsides, can be made with or without skins, for a side dish compatible with almost any menu or meal.

Oven baked melting potatoes are a thin style russet potato with soft potato centers and a brown crisp on the outside. Delicious as a side or just to eat up, this potato recipe will leave you filling full and happy!

CRISPY & SOFT MELTING POTATO SIDE DISH
What I love about potatoes is that they pretty much go with anything. You can fry up fries for chicken, breakfast potatoes for eggs, or potato salad for lunch- the versatility of this vegetable is unmatchable.
And these delicious and easy potatoes are a great way to go through your bag of Russets in no time at all.
This recipe takes about 15 minutes to assemble and begin cooking on the stove and then finishing up in the oven, so I consider them more of an oven-baked melting potato dish over a stovetop.

WHAT ARE MELTING POTATOES?
Melting potatoes were named after potatoes that just melt in your mouth.
A little crispy on the outside and smooth and creamy on the inside. You could make these without the skins on them, too.
It’s really personal preference and delicious, soft, and oh so good no matter what.

OVEN BAKING TIP
This is 10″ skillet, so if you want more potatoes, you have a few options. You can use a larger skillet if you have one on hand OR you can put this into a greased baking pan after you brown the potatoes on the stovetop.
I’d recommend a 9 x 13 if you go that route and then you can easily add more potatoes (in a single layer) and have a larger serving size.
MELTING POTATOES RECIPE
Preheat oven to 400.
Cut potatoes into slices, taking care to keep even so they all finish cooking at the same time.
Place potatoes, oil and butter into an ovenproof skillet and heat over medium heat on the stove.

Browning potatoes on each side, making sure they are golden brown, which takes about 5 minutes each.


Sprinkle with spices and add chicken broth to the skillet.
Bake potatoes for 15 minutes in the oven or until potatoes are tender and liquid is almost all evaporated.
Top with chopped fresh parsley and serve immediately.
