Bacon Wrapped Pickles

Planning a party appetizer tray or just need an afternoon snack without breaking open the chips, this snack is low carb and guilt free – and more importantly, hits all the major tastes and textures – sweet, salty, and savory!

Last week we did one of those insanely long, totally avoidable chores – cleaning out the fridge. And in doing so, discovered about 12 random foods that had been shoved to the back of the fridge into the abyss.

One of those? A jar of pickles…two actually. I don’t know how how one has a large jar of unused pickles, or really two jars, but here we are.

The great news is pickles are a fantastic quick snack that not only tastes delicious just out of the jar, but makes for a simple, low ingredient appetizer that can be ready in a short amount of time.

How many pickles do you need?

One 24 oz. jar of pickles had about 10-12 in the jar.

If the pickles are large, you can certainly cut them in half. I just bought the store brand and found some of the sizes to vary significantly.

One jar will complete this recipe as written.

Cream Cheese and Bacon Pickles

Preheat oven to 400 degrees and line a baking sheet with parchment paper.

Cut bacon in half lengthwise, so you have 2 long strips.

Remove pickles from jar and discard juice.

Use paper towels to dry pickles.

Slice a small strip of cream cheese and lay across the top of the pickle.

You may want to cut the small strip in half so one strip fits onto the pickle.

Wrap in bacon, making sure edges are on the bottom of the pickle, and place on prepared baking sheet.

Repeat until all pickles are covered.

Bake for 12-18 minutes or until bacon is cooked and pickles are hot.

Makes 10-12 pickle appetizer snacks.

Are Bacon Wrapped Pickles Keto?

Pickles are a great low carb and keto friendly snack! The only thing you need to be careful of is the brand of pickles you buy – if they stuff the jar full of sugar, then it obviously changes.

Pickles by themselves are not inherently sugary- so just look for a good brand that keeps the ingredients easy to understand and sugar free.

Plus, who wants sugar in their pickles??

How long to to Bake Bacon Wrapped Pickles?

Timing on cooking pickles really depends on the bacon. The thicker the bacon, the longer it may need to cook to get crispy.

This is why I recommend slicing down your bacon itself, so it cooks quicker. It can take as little as 12 minutes on a full preheated oven to up to 18 to get the right crisp based on your own palette – bacon is one of those ingredients that rely a lot on personal choices!
