Pancake dippers, or cooked bacon smothered and cooked in a pancake batter, are great ways to serve finger food breakfast to kids.

Easily made (especially if you have leftover bacon from another recipe), these quick and easy bacon pancake dippers can be eaten alone or served with maple syrup and a sprinkle of powdered sugar.

Bacon Dipper Ingredients

  • Pancake Mix (and necessary ingredients to make the batter as per the package)
  • Bacon (12–15 slices, cooked and cooled)
  • Maple Syrup (for dipping)

Bacon Pancake Dippers Recipe

Instructions:

Prepare the Pancake Batter: Follow the instructions on your pancake mix package to prepare the batter. If you’re using a mix that makes 9–11 pancakes, that’s perfect for this recipe.

Cook the Bacon: If you haven’t already, cook your bacon strips until they’re crispy.

If you’re using pre-cooked bacon and prefer it extra crispy, warm it up in an air fryer at 320°F for 3 minutes, then drain any excess grease on paper towels. Let it cool before using.

Heat the Skillet: Place a nonstick skillet over medium heat and let it get hot.

Dredge and Cook:

  1. Take a cooled piece of bacon and gently dredge it in the pancake batter, coating both sides.
  2. Carefully place a strip of bacon in the hot skillet.
  3. Cook for about 2–3 minutes on each side until the pancake is golden brown and cooked through.
  4. Be gentle to avoid breaking the bacon, especially if it’s thin and crispy.

Repeat: Continue the process with the remaining slices of bacon, ensuring each one is cooked before moving on to the next.

Serve: Once all the bacon pancake slices are cooked, serve them hot.

Bacon Dipper Tips: If you’re making your bacon from scratch and find it thick, consider adding more pancake batter to the pan for each dipper to maintain a desirable bacon-to-pancake ratio.

Using Pre-Cooked Bacon for Pancake Dippers:

Pre-Cooked Bacon Preparation

If using pre-cooked bacon (which typically comes in 12 slices per package and is thinner), you may find it too flimsy.

We suggest making it a little crispier in an air fryer.

  • Place the bacon slices in a single layer in your air fryer for added crispness.

  • Set the air fryer to 320°F and cook the bacon for 3 minutes. This should make the bacon nicely flat and add a bit of extra crispiness.

After air-frying, remove the bacon and blot any excess grease with a paper towel. Allow the bacon to cool before incorporating it into your recipe.

Using thin but crispy bacon:

Be cautious, as thin, crispy bacon may break when you add the batter, especially towards the ends.

Adjusting for Thicker Homemade Bacon

It might be thicker if you opt for homemade bacon instead of pre-cooked. I love oven-baked bacon if you have the time.

Add an extra 1/2 to 1 tablespoon of pancake batter to the pan (in addition to dipping slices in batter) for each bacon slice so the ratio of pancake to bacon is better.
