Easy Jello Poke cake with whipped topping and berries is an simple and fun July 4th poke cake – learn how to make perfect with red, white, and blue colors that look like beautiful fireworks.

This is a super fun and ideal cake recipe that the kids will love.

Jello Poke Cake

Poke cakes are great for seasonal holidays and bring in an easy and fun way to use colors in a cake. This red, white, and blue cake is super cute for patriotic holidays and can be altered with the jello flavor you love the most.

  • 1 yellow cake mix
  • blue jello
  • red jello
  • whipped topping
  • fresh strawberries

KITCHEN SUPPLIES

Before you get started on this recipe, you will want to have a piping set to make the pretty topping on the cake. The tip used in these pictures are the 4B piping tip.

You can buy individual tips here or a full piping set.

How to Make Poke Cake with Jello

Before you get started on the assembly of a poke cake you need to have already baked and cooked your yellow cake per instructions on the box.

Additionally, I recommend cleaning out the fridge and making a space before you get started so you can easily add the cake to your fridge once you need to set the Jello.

  • Use a fork to poke holes into the cake about 1/2″ apart until entire cake has holes.
  • Add 1/2 cup boiling water and jello and mix well until completely dissolved, about 2 minutes.
  • Add 1/2 cup cold water and mix well.
  • Very gently and slowly, pour jello mixture over cake in small “splotches”.
  • You will need to pour jello repeatedly over the same splotches until completely gone. Just remember to go slow!
  • Refrigerate jello poke cake for 10-15 minutes before moving onto next color.
  • Repeat for the other color jello, pouring in the jello (slowly) in the blank spaces of the cake, trying not to overlap the colors too much.
  • Refrigerate cake for 1 hour before moving onto topping.

Decorate Poke Cake

  • Place whipped topping into a pastry bag fitted with a 4B tip and pipe topping onto the cake.
  • Add fresh berries and blueberries on top of the cake to really make it look red, white, and blue for July 4th, Memorial Day, or Presidents Day. You could also use your berries to make a flag!
  • This cake must be kept in the fridge as whipped topping will melt when left in heat too long.
  • Cake serves 24 slices.

Common Poke Cake Questions

Can you Make Jello Poke Cake the Day Before?

Poke cake is easily made ahead of time and left in fridge. As with anything you leave overnight, just make sure its sealed tightly to keep other smells and flavors out of the cake. Just leave the frosting/whipped topping until just prior to serving.

Can you Freeze Poke Cake?

Yes you can. You can freeze most cakes, but its more difficult if you have already decorated with frosting or whipped topping and berries. If you are planning on freezing poke cake, wrap cake tightly in cling wrap to keep air out and freeze. Defrost in fridge prior to decorating.
