Chili is one of those recipes that is extremely subjective. Beef chili, bean chili, white chicken chili—there really are endless possibilities. And while my entire family loves to chow down on a slow cooker chili recipe all year long, sometimes you just want a quick, easy, personal-sized bowl.

That is why we have translated our favorite copycatWendy’s chili recipe into a personalized single serving for one. This “hungry man” chili recipe is a small batch version perfect for lunch or a cozy night curled up on the couch. Making just about 3 cups, enjoy one big bowl or go in for seconds.

Don’t let the idea that chili needs to slow cook all day keep you from a super satisfying lunch recipe.
Serve with homemade tortillas, top with croutons, or, if you have time, serve in an edible cornbread bowl that takes about 20 minutes in a cast iron pan.
