  • 9 ” or 10″ homemade pie crust or pre-made pie dough

Apple Pie Filling

  • 4 large apples, peeled and sliced (1/4″ slices)
  • 3 Tbsp granulated sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 2 Tbsp all-purpose flour

Maple Oatmeal Pie Filling

  • 4 Tbsp butter, melted
  • 6 Tbsp maple syrup
  • 1/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1 large egg
  • 1/4 cup milk, I used 2%
  • 1 tsp vanilla extract
  • 1/2 cup coconut, sweetened and shredded
  • 1/2 cup old-fashioned oats
  • 2 Tbsp all-purpose flour

Instructions

 

  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll out your pie dough and carefully place it into a 9-inch pie plate (a deep-dish plate works great for this generous filling). Set aside.
  • In a large bowl, combine the peeled and sliced apples with granulated sugar, ground cinnamon, ground ginger, and the first portion of all-purpose flour. Toss gently until the apples are evenly coated. Set this mixture aside.
  • In a separate medium bowl, whisk together the melted butter, maple syrup, granulated sugar, dark brown sugar, egg, milk, and vanilla extract until well combined. Stir in the sweetened shredded coconut, old-fashioned oats, and the second portion of all-purpose flour until just incorporated.
  • Spoon the prepared apple pie filling evenly into the pie crust. Then, carefully pour the maple oatmeal filling over the top of the apple layer, spreading it gently to cover the apples.
  • Bake for 65-75 minutes. The pie is done when the filling is slightly golden brown, set in the center, and jiggles only slightly when given a gentle shake.
